Tex-Mex Red Beans and Rice, Super Quick Version

This is not typical Sunday dinner.  This is "I'm tired" fare; nonetheless, it is tasty.  There will be cornbread served alongside.

 

Tex-Mex Red Beans and Rice

 

1 can kidney beans, drained
1 Tablespoon chili powder (more if you like it spicy)
1 teaspoon olive oil
1 large onion, chopped
1 cup salsa, any kind
1/4 cup water
1 cup uncooked rice
sour cream

 

Cook rice according to package directions.

 

At the same time, heat the oil in a skillet. Add onions and sauté 'til tender and translucent. Then add the chili powder to toast, 1 minute.  Add the beans, salsa and water.  If the mixture is too thick, add an additional 1/4 cup water.

 

Bring to a light boil, reduce heat and simmer about 5 minutes – longer if the mixture is too watery.

 

Serve over the rice with a dollop of sour cream.

Oh, I am gonna try this.  I LOVE red beans and rice.  I am always looking for that perfect recipe.

@Carmie  I just want to caution you that this version is not like the long-cooked, thick and creamy, Louisiana type of red beans.  Although still a good dish, this recipe is very different.  I do not want you to be disappointed.

 

BTW, I use Red Kidney Beans, not the dark ones, but I think that's more about personal preference.

@IamMrsG. I can eat red beans out of the can.  I know I won't be disappointed. Sounds yummy.

I just might have to make this tonight.  I've been wanting something with rice.  Thanks for the recipe.

 

I prefer a canned red bean--Goya makes them.  I don't care for kidney beans as I think their skins are too tough.
