trying to eat healthy,so I put chicken thighs and carrots and onions in the crockpot for dinner tonight.kinda boring,but I'll pretend it's steak and lobster

Maybe start experimenting with herbs and spices. Use the combo above and the choose one night to go to Rome, after that Athens, Hong Kong, Rio,  Morocco, Dublin, Havana,  Beirut, Osaka, San Fransisco, Memphis,, Key West, Nashville, Boston etc. You get the gist. Makes it fun to learn and eat  what kind of herb and spices are used in different cities and countries around the world and zero calories. 

 

Good job SherryKay and thank you for the inspiration. I got on this at one time and I've strayed.

@Luvsmyfam   sounds delicious to me.   I especially love carrots and onions cooked together and adding chicken thighs to make a whole meal should be great.

 

In my house, I'd be making enough to have leftovers!  I do remove the skin and try to trim the worst of the globs of thigh fat, but I often buy thighs and/or legs.

I do a lot of the currently popular "one-pan" oven roasting of meats and vegetables, and almost always include carrots.  Sometimes I roast only  vegetables while the meat is cooked another way.

 

It's all in how you season the food that keeps it from being tiresome.  Carrots can be absolutely great  when roasted along with baby gold potatoes and  other vegetables, such as squash, asparagus, fresh green beans or brussels sprouts.

 

  In the pan, I like to toss the vegetables with a little olive oil, a little butter, plus salt and McCormick Gourmet Italian seasoning blend (oregano, rosemary, thyme and a few other herbs).

 

. On a baking sheet,  place partially peeled baby gold or yellow  potatoes (halved if they are large),  carrots, any other vegetables you like, plus a  cut-up  onion.

 

Heat oven to about 400 degrees and roast until you like how well everything has done.

 

Carrots alone are really good when roasted along with pork tenderloins marinated with a  blend of maple syrup, Dijon mustard and other seasonings, such as dried rosemary.

Chicken Cacciatore

2 cans recipe cut tomatoes and liquid.

1 lg. can tomato sauce

1/2 onion cut up

1/2 c bite size mushrooms

1 chopped green or red bell pepper

1 pepper cut in half strips.

1/2 cup white zin (optional)

1/2 Tbs. oregano

1 Tsp. basil

Grated parmesan cheese 

4 cooked chicken pieces off the bone in bite sizes.

Cooked spaghetti or small egg noodles, tossed with butter or olive oil to prevent sticking.

  1. Combine all items but the chicken and noodles, and cheese in a large sauce pan. 
  2. Bring to a soft boil, then lower to simmer until vegetables are tender and the liquid has reduced, about 20-30 minutes.
  3. Add chicken pieces and continue to warm, about 10- 15 minutes.
  4. Serve over hot pasta or rice with (optional) grated parmesan cheese.
