How do you make yours? Last night I did a new TOH recipe and just loved it. I'm not a lover of my veggies this way either. The other one I had, had some tomato sauce in it and onions. The one I did yesterday didn't. I really liked it too, picture me amazed.
So how do you make yours? I love Mexican if not too spicy, for the great flavors.
Care to share?

I like the traditional stuffed peppers with the ground meat, rice, onion and celery and an egg to hold it together then I put them in the crockpot - cover with crushed tomatoes and cook all day. Then I cut up the leftovers and add beef broth the next day for stuffed pepper soup.

Sometimes I make a huge pan of stuffed peppers and freeze them individually, sometimes I line a casserole dish with peppers halved lengthwise and just line the pan with them. For filling, I use browned hamburger (very lean!), and sautéed onions, pieces of pepper, and garlic, salt and pepper. To that I add some usually leftover rice.
I stuff the peppers or put the filling in the pepper-lined casserole and bake until heated through. Sometimes I soften the peppers in the microwave before stuffing, sometimes I roast and peel them. Sometimes I just put them in raw. Hubby doesn't like the tough skins on the outer part of the peppers, so I usually try to take that off.
If you are feeding a lot of people, the casserole version is great!

I make the Stuffed Peppers inside out or Unstuffed. Make it just like Unstuffed Cabbage. Brown ground beef, drain. Saute onions, a few chopped peppers, garlic and s&p. Add rice and twice that amount of tomato juice drained from diced tomatoes. Save any extra juice in case it cooks dry. Add 1 lg or 2 sm peppers cut into strips. The thinner they are, the faster they cook. Some like it crisp tender; I like it well cooked. The rice should be done in 20-25 minutes. I'm gonna try adding the taco seasoning. That sounds yummy!
