Hi friends..so good to see you! I was in one of the stores here and they were selling some Gooseberry Patch paperback cookbooks. They had a variety of them. I picked one up (casserole dishes) and was thumbing through it while shopping. I ran across a recipe that looks yummy! I love pasta and tacos so this stood out for me. I didn't purchase the book, BUT I did write down the recipe! Just thought I'd share it. Looks like alot of shells though..I will probably cut the recipe in half. I was writing the recipe in "my" shorthand..now to decode it..lol. Here goes:

Taco Pasta Shells

2 pounds ground beef

1 (2 ounce) pkg. cream cheese...cubed

2 (12 ounce) pkgs jumbo pasta shells

1/4 cup butter...melted

1 cup salsa

1 cup taco sauce

1 cup cheddar cheese...shredded

1 cup Monterey Jack cheese...shredded

1 1/2 cup tortilla chips...crushed

Brown beef. Drain. Add taco seasoning and cook according to directions. Add cream cheese. Stir til melted. Remove from pan and put in bowl. Chill for 1 hour. Cook pasta. Drain. Coat with melted butter. Fill the shells with 3 Tablespoons beef mixture. Spoon salsa in the bottom of a 9x13 inch pan, Place filled shells on the top of the salsa. Cover with taco sauce. Bake covered at 350*. Uncover then top with cheeses. Sprinkle the cru8shed tortilla chips over the top. Bake another 15 minutes or til cheeses are melted.
