TOMATO & OLIVE PASTA

1 LB short pasta (Penne, Ziti, Rigatoni)

1/4 cup olive oil

2 garlic cloves, sliced thin ( I used minced)

2 cups cherry tomatoes (halved)

1 tsp dried Oregano

1/4 tsp crushed red pepper flakes

1/4 cup ripe black olives (pitted/sliced)

1/4 cup chopped parsley

1/4 cup grated Parmesan cheese

1/2 tsp salt

1/4 tsp pepper

Cook pasta as directed. Meanwhile, in large skillet, heat olive oil, add garlic. Over medium heat, stir until garlic is golden ( about 1 minute ). Add the tomatoes, oregano, red pepper flakes, salt and pepper. Reduce heat to low, and cook, stirring, about 3 minutes. Add olives, parsley, parmesan and pasta to the skillet. Toss to combine. Serve with more Parmesan on top.
