TOMATO AND SCALLION BREAKFAST MELTS

1/4 cup nonfat plain Greek yogurt
1-1/2 tbsp Dijon mustard
1 tbsp extra-virgin olive oil
1/2 tsp dried oregano
1/8 tsp kosher salt

Wisk the above together in a small bowl.

Toast 4 whole grain English muffins while heating broiler.

Sprinkle with 1/2 cup grape tomatoes, quartered, 4 finely chopped scallions and 1/2 cup sharp cheddar cheese.

Broil for approximately 1-1/2 minutes until chese has melted.

Original recipe did not call for toasting the English muffins but I found them too soft. I guess you could toast them under broiler instead of toaster. Just a personal preference of mine. Hope you enjoy!
