I hadn't made this for a few years but did so this weekend. I don't have a recipe written down just did it from memory and it turned out well so I think I got all of the ingredients right. 
4 med-lg sweet potatoes (peeled and sliced like country fries)
1 can black beans (reg sized can)
1 lime (cut in half and juiced)
2 avocados
2 TBS butter
Preheat oven to 425.
In a non stick dish place sliced sweet potatoes and drizzle olive oil over. Cover and place in oven for 35 min or until they are tender.
(About 10 min before SP are done) In a sauce pan combine black beans, juice of lime and butter, cook until hot.
Once the SP are done, plate up how you would like to and then pour the beans over and then add fresh sliced avocados on top of that. Add S&P or just S to avocados if desired.
