HI  Was wondering if anyone has an easy recipe for sweet cucumber pickles can not find any in grocery stores.

This is how my husband's grandma used to make them.  She served them everyday at lunch and dinner:

 

1 lb pickling cucumbers sliced into chips

1 onion halved and sliced thin

1 tbsp kosher salt

1 cup cider vinegar

3/4 cup sugar

1/2 tsp mustard seeds

1/4 tsp celery seeds

1/8 tsp ground turmeric

 

Stir cucumbers, onion, and salt in colander over the sink, let sit for 1 hour.  

Bring vinegar, sugar, mustard seeds, celery seeds, and turmeric to boil in big pot.  Turn down heat to low and press cucumbers and onion into liquid.  Cover and cook for 5 minutes.

Pour into glass bowl and refrigerate for 2 hours.

They didnt have them at Walmart last I checked.

A friend kept these all the time..... so easy!

 

Microwave Pickles


Ingredients

  • 1 medium cucumber, thinly sliced
  • 2 small onions, thinly sliced
  • 3/4 cup sugar
  • 1/2 cup vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon mustard seed

Directions

  • In a large microwave-safe bowl, combine all of the ingredients. Microwave, uncovered, on high for 3 minutes; stir. Cook 2-3 minutes longer or until mixture is bubbly and cucumbers and onions are crisp-tender.
  • Cover and refrigerate for at least 4 hours. Serve with a slotted spoon.

I would use 1 tsp Bell Pickling Spice.  (usually with canning equipment in a store)
