I bought a 3-pound bag of Vidalia onions this week -- Herndon Farms of Lyons, Georgia (next to Vidalia). So fresh, sweet and juicy. It's the start of the season. I've never had better.

 

Thank you Georgia farmers. Thank you Mother Nature.

I had to travel to Vidalia with work a few times a year in the past.  During harvest season the town smelled like onion rings.  It was a wonderful smell.  Coworker would give me a gallon bucket full of onions to take back home.

Had my first vidalia when I vacationed in Hilton Head 30 years ago. We paid $1.00 for one onion. Never forgot the taste of that perfect onion. And the smell of Jasmine was the best. Takes me back to better tiimes.

Yummy...they are so good for making Grench Onion Soup.

They would work perfectly for Tennessee onions.  I used them for my last batch and will be making them again for Easter.
