Surprise Filling Carrot Cake
1 (8 ounce) package cream cheese...softened
1 3/4 cups sugar
4 eggs...(beat 3 eggs together and the 4th egg beat separately).
2 teaspoons baking soda
2 teaspoons cinnamon
2 cups flour
1 teaspoon salt
1 cup oil
3 cups grated carrots
3/4 cup nuts...chopped
powdered sugar
Grease and flour a 9 inch bunt pan. Combine cream cheese, sugar and 1 egg. Mix until well blended. Set aside. In a separate bowl, combine dry ingredients. Add oil and 3 beaten eggs til completely moistened. Fold in carrots and nuts. Reserve 2 cups of batter. Pour remaining batter into a 9 inch greased and floured bunt pan. Pour cream cheese mixture over batter. Carefully spoon the reserved 2 cups of batter over the top of the cream cheese mixture. Spread to cover. Bake at 350* for 55 minutes or till inserted toothpick comes out clean. Cool for 15 minutes then sprinkle with powdered sugar.
