Butter Sugar Cookies
1 cup of butter...Smart Balance sticks are great and healthier
1 1/2 cups sugar
1/2 tsp salt
cream these together
2 eggs
1 tsp vanilla
1 tsp almond extract
or lemon, rum, brandy, etc.. your flavor choice
cream into above
3 Tbs cream or half and half
1/2 tsp baking soda
1/2 tsp baking powder
dissolve in the cream
3 1/2 cups flour or more as needed
You can substitute 1 cup of almond or other nut flours for the flour
If you do not have nut flours...You can make it in a processer...just grind your nut of choice...toasting the nuts first is nice.
Blend flour / mixture into creamed butter mixture...Add cream/soda/powder
Form into 2 balls and refrigerate...overnight is best...
Roll out cold/.cool dough ...one at a time...keep other cold while working...
Cut into desired shapes
Brush on an egg wash either for shine or to add colored sugars, decors...
Bake clean if you are going to frost them.
Frost when cool, unless you glaze them.
Bake ungreased or light non stick spray
400* 6-8 minutes
