I've switched mine up a bit due to my BF's special diet and now use cauliflower rice from the freezer section rather than regular rice.

I make my own at least once a month - then what's left I turn into stuffed pepper soup.

 

Havent made them only because the peppers are $3.49/lb. and small.  I like a medium size pepper.

 

Although, I rarely buy prepared foods I'm gonna try the Stouffers as shown cuz if they're as good as their mac n cheese I'm "in"!!!

I agree with @deepwaterdotter that the Costco prepared stuffed peppers are really good.  We have started to use them instead of make our own.

Thanks all for the suggestions. Stouffers might be a good cheat. Sounds like my kinda cooking. 😀

I made stuffed peppers for our Christmas meal.   Very nice sized peppers but at a cost of $1 each.

Another fan of stuffed peppers. As green peppers bother hubby, I make them with red peppers instead. I slice them lengthwise and stuff them with a mixture of gr. beef, onion, rice, salt/pepper then top with a can of crushed tomatoes and bake. I always make enough for several meals - they freeze well.
