Stuffed  Zucchini

 

Brown together then drain:

 

1 pound lean ground beef

1/2 onion...chopped fine

1 clove garlic...minced fine

salt and pepper to taste

 

 

Add:

2 cans whole tomatoes...chopped coarsely, OR you can                                                      use 3 cans stewed tomatoes

1 green pepper...chopped

1 teaspoon marjoram

1 teaspoon oregano

1 teaspoon thyme

 

While stirring constantly  (so it dosen't stick to bottom of the pan), simmer til thickened .

 

 

Cut 1 big Zucchini in half lengthwise and hollow out the middle.  Stuff the Zucchini with the sauce. Bake in a covered pan at 350* for 30 minutes. UNcover and cook longer til it's done (about 30 minutes longer, or til Zucchini is tender).  Top with grated cheddar cheese and bake for an additional 5 - 10 minutes or til cheese is bubbly but NOT brown.
