Yesterday I tried to make stuffed cabbage. After cooking 3 hours on top of stove the cabbage was still hard! I made it just how I remember my Mom making it only hers was fantastic. She is gone now so I can't ask her advice. What could I have done wrong?

I cut my head of cabbage all around the core and place in a big pot of boiling water to wilt and while it is wilting I make a mixture of :

a pound of hamburger

a pound of sausage

a cup of rice

a cup of chopped onions

(Some green peppers if desired, about 1/2 cup)

salt and pepper

Mix together and place in wilted cabbage leafs, secure with toothpicks and place in large stock pot and cover with tomato juice....I use two large cans. Bring to a low boil then reduce to a simmer and cook for about 3 to 4 hours.

This is also what I do. I'm thinking of making it tomorrow in my crock pot. I can't remember if I used to cook the rice before adding it to the mixture.

I too have had trouble with steaming the cabbage and am pretty sure it was just a tough cabbage. Try to get a head of cabbage that has the least amount of green. I cut the core out of the cabbage and then steam it on the stove top.

I use ground meat, cooked rice, a little Worcheshire (sp?) salt, pepper and onion powder. No egg is needed because the cooked rice holds it together.

I make an oval shaped ball and place in the cabbage leaf and then tuck in the ends and roll them up. Place in a pan and cover with stewed tomatoes. Cover with aluminum foil and bake in the oven.
