Strawberry French Toast Bake
1 loaf french bread..cut into 12 3/4 inch slices
1 8 ounce container cream cheese with pineapple
4 eggs
1 cup milk
1/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
2 tablespoons butter
Topping:
1 quart strawberries
1/2 cup sugar
1/2 teaspoon vanilla
Spray a 9x13 inch GLASS baking dish with non stick spray. Divide cream cheese into 6 portions and spread it on 6 slices of bread. Top with remaining bread slices to make sandwiches. Place in backing dish to cover bottom. Beat eggs, Add milk, sugar and cinnamon. Beat well then pour over bread in baking dish. Let stand 5 minutes then turn the bread slices over. Cover. Refrigerate OVERNIGHT or no less than 8 hours. Chop 1 cup of the strawberries (refrigerate remaining strawberries). In a NON METAL bowl, combine the chopped berries, 1/2 cup sugar and vanilla. Stir to mix. Cover and refrigerate OVERNIGHT. The next morning, heat oven to 400*. Melt 2 tablespoons butter. Uncover baking dish and drizzle the melted butter over the bread slices. Bake 25-30 minutes or til golden brown. Meanwhile slice the remaining strawberries and add them to the chilled strawberry mixture. Mix lightly. Serve the french with the strawberry topping.
~~~Sometimes I have been unable to get the cream cheese with pineapple. When that happens I just drain the smallest can of crushed pineapple and mix it with 8 ounces cream cheese.~~~~
