Strawberry Cream Cheese Pie

1 qt strawberries

1 8-oz cream cheese, softened at room temperature

1/2 cup powdered sugar

1 cup sugar

3 T corn starch

grated coconut (opt)

Pie shell...9 inch pre-baked

Over the bottom of your cooled 9-inch pie shell, spread softened cream cheese that has been mixed well with the powdered sugar. Cover cheese with half of the whole strawberries that have been cleaned and hulled. Mash the other half and strain until there is 1-1/2 cups juice (you made need to add a little water) Bring juice to a boil and gradually stir in sugar and corn starch which has been mixed well before adding to juice. Cook over low heat stirring constantly until boiling. Boil 1 minute, let cool, and pour over the whole berries.

Chill for at least 4 hours. When ready to serve, you can sprinkle coconut over and top with whipped cream, or simply serve the cream on the side!
