I made butternut squash soup yesterday for dinner. Was very good. I put in a sweet potato too. Cooked the squash/potato up in the oven, then whirled it up in my vitamix and added a glop of heavy cream. Didn't have any vegggie broth but used garlic broth instead and a bit of chicken broth too. I think what made it especially tasty is I added my own home grown herbs and fresh ginger gave it a little bit of a kick.. Used up the rest of the foccacia bread, and had cantaloup--was a rather orange-ish meal. I really liked the recipe I used too.

I've never had Squash soup but it sure sounds good.

@JYWilliams --It is very good and pretty easy to make. We had it last night for dinner--again--and it just gets better --fixed chicken tenders,and bacon to make a-- cbtl sammie--chicken , bacon, lettuce and tomato on a crusty roll. YUM!!

I love squash soup. There are so many things you can add to it to flavor it up. I like to add a little curry. Some people add brown sugar and/or cinammon along with curry. I also add roasted garlic and roasted onions when I put it through the blender. Fresh herbs would definitely make it heavenly.
