I have posted this before..it's really good and the first time that I made it was for Easter dinner in 2006. Smile

Spinach & Rice Casserole



1 (10-ounce) package frozen spinach, cooked, drained, and cooled
3 cups cooked rice
¼ cup (1/2 stick) butter, melted
1 teaspoon onion flakes
2 cups Cheddar and Monterey Jack cheese, shredded
4 eggs
1 cup milk
1 teaspoon Worcestershire sauce
1 teaspoon salt

Preheat the oven to 350 degrees. Grease a 2-quart baking dish. In a large bowl combine the spinach, rice, butter, and onion flakes. Add all but a handful of the cheese. In a separate bowl mix the eggs, milk, Worcestershire sauce, and salt. Add to the spinach mixture and mix well. Pour into the prepared dish. Sprinkle the reserved cheese on top. Bake for 40 minutes, or until the middle of the casserole is set.
