Thanks for sharing. I have some overly ripe bananas sitting on the counter.

Maybe I will do something with them this weekend.

Banana nut bread or muffins either one sound yummy.

Hee @Coquille I couldn't believe all of the terrific recipes from Tablespoon this morning and I was like a kid in a culinary store when I logged in this morning!  I too hope you and yours have a wonderful and delicious holiday season my friend!  Heart

My favorite breakfast casserole:

 

1 lb chopped bacon

1/2 cup chopped onions

1/2 cup chopped green pepper

8 lightly-beaten eggs

1 1/2 lbs frozen shredded hashbrowns

1 tsp hot sauce

1/2 tsp salt

1/4 tsp pepper

3/4 cup cottage cheese

3/4 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded Swiss cheese

 

Cook bacon, onion, and green pepper in large skillet over medium heat until bacon is crisp.  Drain grease.

Mix eggs, hashbrowns, hot sauce, salt, pepper, cottage cheese, sour cream, cheddar cheese, and Swiss cheese in large bowl.  Stir in bacon and vegetables.

Spread in lightly-greased 9"x13" baking pan.  

Bake in 350 degree oven for 45 minutes.  

Let rest for 10 minutes.

Though i cannot bakr or cook this year due to an injured wrist and hand, alas, the last thing I would make would be banana bread or my mother's dreaded zucchini bread.  Simply over done in my book and no longer enjoy making and eating them.  I really do enjoy more complex breads, breakfast pastries, etc..  Most here would read right past my recipes.

I usually keep a few loaves of banana bread and this time of year, pumpkin bread in the freezer.

 

Nothing better on a cold & snowy weekend morning than a steaming cup of coffee and a slice of homemade bananna bread.
