I just made this recipe and it is delicious. Very good with a nice cup of tea. These cookies are soft and moist if you are careful not to overbake. If you like honey you will love these.

Honey Cookies

  • 1 cup butter
  • 1 cup brown packed
  • 2 eggs
  • 12 tablespoons honey
  • 2 teaspoons vanilla
  • 3 1/2 cups flour
  • 2 tsp cinnamon
  • 2 teaspoons baking soda

Directions:

Preheat oven to 350 degrees F. Combine ingredients in this order: Cream the butter and sugar with an electric mixer. Add eggs, honey, and 2 teaspoons vanilla and blend until smooth with the mixer. Into this mixture, add flour and baking soda. Mix into a thick dough. Chill dough until firm, preferably in freezer,( I DID NOT DO THIS) approximately 2 hours. Pull off small pieces and roll into 1-inch balls.(I used a cookie scoop and dropped the balls into a bowl of turbinado sugar) Place on ungreased cookie sheet.(I greased some parchment) Bake for 8 to 10 minutes.

I rolled the dough balls into raw turbinado sugar and they have a wonderful crunchy coating that contrasts nicely with the soft, chewy interior. Also, I halved the recipe and they came out perfectly.
