This is one of the handiest recipes I have; it's especially nice if you have school age children and want an occasional treat for them. Simple, inexpensive, convenient; your choice of applesauce or chocolate, or perhaps adapt to your own flavors:

Marla’s Snack Cake Recipe

8 c flour
2 T baking soda
1 T salt
6 c sugar

Mix. Divide into 2-1/4 c quantities and put in Baggies.

for Choco-Snack Cake:

1 pkg snack cake mix
2 T cocoa
3/4 c water
1 egg
1/3 c oil
1 t vanilla
1/2 c chocolate chips
1/2 c nuts

Preheat oven to 350 deg F. Combine snack cake mix and cocoa in 8" square pan. In a medium bowl, combine water, egg, oil, and vanilla. Stir into cocoa mix. Stir in nuts. Sprinkle chips on top and bake 30-40 min.

for Applesauce Snack Cake:

1 pkg snack cake mix
1 egg
1/3 c oil
3/4 c applesauce
1 1/2 t cinnamon
1/2 t allspice
1/8 t cloves
1/2 c nuts
1/2 c raisins

Preheat oven to 350 deg F. Combine snack cake mix and spices and mix. In a medium bowl, combine egg, oil, and applesauce. Stir into cake mix and add nuts and raisins. Bake 30-40 min.
