This is a popular dish at our house. I hope that you enjoy it as much as we do.
SLOW COOKER WHITE CHICKEN CHILI
Makes 8 servings
1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 can chicken broth (14 oz)
1 teaspoon ground cumin
1 teaspoon dried oregano leave
½ teaspoon salt
ÂĽ teaspoon red pepper sauce
1 ½ lb. boneless skinless chicken thighs, trimmed of fat
2 cans (15 to 16 oz ea. ) great northern beans, rinsed, drained
1 can (11 oz ) Green Giant white shoepeg corn, drained
2 tablespoons lime juice
3 tablespoons chopped fresh cilantro
1. In 3 ½ - 4 – quart slow cooker, mix onion, garlic, broth, cumin, oregano, salt and pepper sauce.
Add chicken.
2. Cover and cook on Low heat setting 4 to 5 hours.
3. Remove chicken from slow cooker; place on cutting board. Use 2 forks to shred chicken into pieces. Return chicken to slow cooker. Stir in beans, corn, lime juice and cilantro. Increase heat setting to High. Cover and cook about 30 minutes or until beans and corn are hot.

Hi razorbackfanreturns........ My family loves this recipe and what I like about it is how easy it is to make. I also like that it calls for chicken thighs instead of breasts. The thighs make it nice and moist.

You must be a mind reader! I went out for lunch Saturday and I this with a delish cornbread. I never had it before. It was fabulous. Hubby loved it too. I was going to search for a recipe on Sunday but, of course, I totally forgot. So now I have it. Thanks! I'll make it for Sunday when my girls and their guys come over.

Hi chrystaltree....... I made it the other day and thought to myself that this is one of the recipes that I have never posted on here so I decided to post it. We must have been on the same wave length......lol. I am glad to hear that you had it for lunch and that you enjoyed it. Yum.......next time I make it I will definitely make some corn bread with it. We love corn bread. I hope that you get a chance to make it and that everyone enjoys it. I often double the recipe.
