Slow Cooker Mini Meatloaves

1 1/2 cups cracker crumbs

2 eggs...beaten

1/2 cup catsup

2 tablespoons brown sugar

2 tablespoons mustard

pepper to taste

3 pounds lean ground beef

2 tablespoons vegetable oil

1 (26 ounce) jar pasta sauce

1/2 cup catsup

1/4 cup honey

2 tablespoons apple cider vinegar

In a large bowl, combine cracker crumbs, eggs, 1/2 cup catsup, brown sugar, mustard and pepper. Mix well. Add ground beef and mix gently using your hands. Scoop into 1/4 cup individual balls. Form into oblong shaped loaves. When all the meatloaves are formed, heat oil in a large skillet and brown on both sides turning once (takes 4-6 minutes). When they are browned, put in slow cooker. In a medium size bowl, combine the pasta sauce, 1/2 cup catsup, honey and vinegar. Mix well. Pour over meatloaves. Cover and cook on LOW 8-9 hours or til tender and have reached 165*. Gently remove from cooker.
