Slow Cooker Chicken Caesar Sandwiches

A friend made these sandwiches for a recent luncheon. They were very good so I was glad she shared the recipe with us.

Slow Cooker Chicken Caesar Sandwiches

2 pounds boneless skinless chicken thighs or breasts
1/2-1 cup of your favorite Caesar dressing
1/2 cup shredded Parmesan cheese
1/4 cup fresh chopped parsley or 2 tsp. of dried parsley
1/2 tsp. ground black pepper
2 cups shredded romaine lettuce
12 slider buns or 4-6 regular size buns

Place chicken in 3-4 qt. slow cooker with 1-2 cups water or chicken broth. Cover and cook on LOW heat for 4-6 hours.

Remove chicken from cooker using a slotted spoon. Drain water from the cooker. Place chicken on cutting board and pull the chicken into shreds, discarding any fat.

Place chicken back in cooker and pour Caesar dressing, Parmesan cheese, parsley and pepper over top. Stir until evenly mixed. Cover and cook on HIGH for 30 minutes or until until mixture is hot.

Serve in buttered buns.
