Slow Cooker Bacon-Wrapped Apple Barbecue Chicken

/><br/> <br/> <span style=I've vowed that I'm going to start using my crock pot more......there are so many great recipes out there and it really is wonderful to have your main dish cooking low and slow all day-one less thing to worry about while prepping dinner, and OH BOY does it smell good cooking!

When I saw this recipe, I knew I had to try it. Not only is it easy...with chicken, bacon, apples and barbecue sauce...what's not to love?

The chicken comes is SOOOO moist and tender. The bacon flavors the sauce but really doesn't make an appearance in the dish-it sort of disappears into the chicken. The apples add a touch of sweetness and the lemon juice counterbalances the sweet with a little background tartness. This makes for one VERY flavorful combination.

Sauces in crock pots are usually a little too thin for us-we like them a little on the thick side, so I opted to use a cornstarch slurry to thicken all that saucy goodness once I removed the chicken from the crock pot. I'm glad I thickened it-we had the chicken with brown rice and the thicker sauce made a perfect topping once the chicken was nestled on top of that rice. Add steamed fresh green beans and this was one wonderful meal.

I reheated the 2 pieces of chicken that were left over last night and I have to tell you, the chicken was even MORE tender than the night before.

Will I be making this one again? Oh you BET I will.....it is DELICIOUS!

SLOW COOKER BACON-WRAPPED APPLE BARBECUE CHICKEN

4 skinless, boneless chicken breast halves
1/2 c. barbecue sauce
1 apple, peeled and grated
1 lemon, juiced
1 Tbsp. cornstarch
2 Tbsp. cold water


Combine barbecue sauce, grated apple and lemon juice in a small bowl; mix well.

Wrap 2 pieces of bacon around each chicken breast. Place chicken breasts in base of crock pot; pour barbecue sauce mixture over top of chicken. Cover; cook on Low for 8 hours.

Remove chicken from crock pot.

Skim fat from sauce. Pour sauce into a small saucepan; bring to a boil.

Combine cornstarch and water; whisk until blended. Add cornstarch mixture to sauce; stir until thickened. Serve sauce with chicken. 4 servings.
