This is a recipe I found in a mag. years ago, sorry can not give credit where. I will say it is delish!

1 1/2 to 2 lbs of beef round steak cut into 3 in. X 1 in. strips

1/4 cup soy sauce

1 cup chopped onion

1 garlic clove minced

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon ground ginger

1 can 16 oz. tomatoes with liquid cut up ( I get the diced tomatoes)

2 large red bell peppers cut into strips (recipe calls for green I use the red, I do not like green!)

1/2 cup cold water

1 tablespoon corn starch

Cooked noodles or rice. I have use Quinoa and Cous Cous too!

Brown beef in skillet with oil or spray pan. Transfer to slow cooker. Combine next seven ingredients (to ground ginger). Add to crock pot cover and cook on low 5 to 6 hours.

Then add the tomatoes and red peppers (green) cook for 1 to 2 hours more till peppers are soft amd meat is tender. (Check after one hour!) Combine water and corn starch to make a paste stir into crock pot. Cover and cook on high till thickened. Serve of the rice or noodles. Enjoy!
