I always use the reduce fat cream cheese when I make mine as lemon or lime.  It is just fine.

@sabatini   I remember this dessert from the Woolworth lunch counter when I was a child.  My grandmother and I would share a slice.

@sabatini Got this recipe from a favorite Aunt in the 1950's.

 

Cool Whip wasn't available then so she used a can of Carnation Milk "whipped!"  Delicious!

 

Your recipe is easier but equally delicious!

Hi @Zhills!. Yes, you're right! The original recipe did call for whipped evaporated milk.

But since sometimes it's too finicky to fully whip, I subbed Cool Whip. 

 

It's a great, old dessert!

@cody2 @since you mentioned. Key Lime Pie I have to make a suggestion. I made one and instead of using  graham crackers for the crust I used Ginger snap cookies instead. A great compliment  to the Key Lime.

@panda1234 I will definitely try that. I loved ginger snaps as a kid. Haven't thought about them for a while. I can't even remember ever seeing them in the store. I did do the key lime for my family. It got A+ from the family.

But ewwwwwy. I really could not stand that evaporated milk. Awful stuff. On the other hand, Cool Whip makes everything better.

While I do not drink evaporated milk, it is what I always use when making Lemon Cheesecake (ie Woolworth's version).  For many years my oldest son claimed it for his "birthday cake" (only more recently requesting a big apple crisp).  As our family grew, I stared doubling the recipe. . . I have also made a strawberry version of this.Jello cheesecake, which is equally delicious and really a pretty PINK!  Both the lemon and strawberry cheesecakes are perfect for Easter lunch or a summer gathering.  .  .
