Thinking that sometimes we need to be reminded how simple some good food can be, I'm offering this for all who like green beans. (I keep some slivered almonds in the freezer and would use them instead of the sliced almonds.)
BALSAMIC GREEN BEANS WITH ALMONDS--4 servings
1 pound fresh green beans, trimmed if necessary
1 tablespoon olive oil
2 teaspoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons sliced almonds, toasted
To toast almonds, use a dry skillet over medium heat for 3-5 miutes or until the almonds are "fragrant", stirring frequently. Set almonds aside.
Place beans in medium saucepan and cover with water.
Bring to a simmer over high heat.
Reduce heat; simmer uncovered 4-8 minutes until beans are crisp-tender; this depends on how thick the beans are.
Drain well and return to saucepan.
Add oil, vinegar, salt & pepper.
Toss to coat.
Sprinkle with almonds and serve.

That sounds delicious novamc. I'm trying to get out of doing vegetables the same old boring way, even thinking about getting a carbon steel wok so I can make decent stir fry at home. Regarding this recipe, I love oven roasted vegetables so I think oven roasting the green beans with the olive oil, salt and pepper then sprinkling on the almonds and balsamic vinegar might also be quite tasty as well.

I often roast green beans (even frozen whole green beans) along with small potatoes, carrots and onions in a casserole dish. I like your idea of roasting the beans instead of boiling.for this recipe.

Green beans are among my favorite veggies! So, thanks for the recipe. I think, if the beans are freshly picked (and I'm looking at the Bush 274 plants in my garden and anticipating wonderful things), just a little butter and salt in a saute is the best application. I have recently discovered that our local Acme has bags of frest green beans in the pre-packaged produce section. They are really good! In fact, I just made them for supper tonight. Keep up the fun food talk!

The packaged fresh green beans in the produce department have been a godsend for me. For years, I stopped trying to hand-pick loose beans from the array that is always on display. They usually look awful, and who knows how may people have culled through them.. When the packaged fresh beans go on sale, I go for them every single time.
When frozen whole green beans are on sale, I buy more than one bag, too. We really like green beans at our house.

The natural sugars come out and the veggies get crispy.

Wegman's sells fresh green beans in a microwaveable bag! Poke a few holes and 3-4 mins. later you are all set to try a recipe like this.
No boiling, steaming...just zap and enjoy! Very convenient and easy!
I always zap at the lowest time recommended since I like my beans crispy.
I would definitely use them for this delish recipe!

In addition to the microwave-steamable bags of green beans, I now always look for the steamable bags of little red or gold potatoes. I usually don't steam them and, instead, partly peel and then quarter about half of one bag per meal to oven-roast with other vegetables. Very handy and usually seem very fresh.
