Re: Simple White Bread (with egg)

I am in the process of perfecting a foccacia bread recipe. I mix the dough in my bread maker then go by hand from there---so that is the proofing/ rising and  shaping---then the baking--we like it for sandwiches and it makes wonderful toast---

Thank you, my neighbors are both ill, cancer and cardio vascular disease and I knew this would be soft and easy to digest. I refer to them as elderly, however, I'm 72, not too much younger than they are.

Thank you for looking out for your neighbors.

It made me think how much we miss our neighbor. We used to make extra large meals. So we could give him Corned Beef and cabbage on St Patty's Day or order extra take out meals etc. We even had a special plate for him with 3 compartments on the plate and a cover.

Every time I look at his house now, I miss seeing and talking to him.

His lawn was the showplace of the neighborhood. As he aged he wasn't as particular. He would sit on his riding mover and try his best. At 92 he did a good job. Later my husband would take his lawnmower and tidy up the lawn where spots were missed and I tried to pick any dandelions and weeds.

We tried to time it when he was taking his nap. We thought he wouldn't notice us.

Well, after he died his kids brought us a big gift basket. They thanked us for the different things we did for their Dad. And they mentioned the lawn. We thought and hoped that he didn't notice.  We wanted him to be proud of the job he did. But I guess he did.

My neighbors were the ones everyone warned us about. Turns out we couldn't ask for better neighbors.

Your story reminds me of neighbors we had 50 years ago or longer, all from Europe after the war. They're long gone but we miss them.

How thoughtful of you to share your lovely loaf.  DH and I are 64 years old. We just built a modest home in a new development.  There will be about 50 homes when it's finished being built and we are among the oldest in the community. I hope our young neighbors are as kind to us as we get older.

Re: Simple White Bread (with egg)

I believe that is called challah. I used to make it all the time. Needs a braid.

No, it isn't Challah, I've also made that.

'When I made Challah, it always came out dry not like mom used to make.
