Simple Summer Peach Cake

Simple Summer Peach Cake

This is such a winner. Actually it's a State-Fair Blue-Ribbon Winner :-) It's quick, easy and tastes great. Plus, it's not a huge 'cake' because it's just baked in a 9" round cake pan. Enjoy!


3 ripe peaches
3/4 teaspoon freshly ground nutmeg
3/4 cup sugar
5 tablespoons softened unsalted butter
1 large egg
1/2 cup buttermilk
1/2 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
1 cup all purpose flour
1/2 cup almond flour (or finely ground almonds)
1 teaspoon baking powder
1/4 teaspoon baking soda
Turbinado sugar

Preheat the oven to 350 degrees. Butter and flour a 9-inch cake pan.

Cut the peaches into bite sized pieces. Toss the peaches with nutmeg and 2 tablespoons sugar. Set aside. Cream together the butter and remaining sugar with a wooden spoon or spatula. Add the egg, buttermilk and extracts, and stir to combine. Combine the flours, baking powder, baking soda and salt. Add this flour mixture to the butter mixture, mix until smooth (some lumps may remain). Pour into the prepared pan. Press the peaches into the top of the cake. They can be nicely arranged, but I like to cram as many peaches as possible into the cake. Sprinkle turbinado sugar over the top.

Bake for 10 minutes, then reduce the oven heat to 325 degrees and bake for an additional 45 to 55 minutes, or until a toothpick in the center comes out clean.

Thanks for sharing. Looks yummy. I have a whole crisper drawer full of fresh peaches. I have been eating them every day for breakfast or lunch. I sliced up about 50 peaches so far & put in the freezer. The truck from Colorado will be back Tues. I wanted to buy 2 mores cases but may only buy one. Need to make some peach jelly or jam.

You're very welcome, Nightowl. Wow, it sounds like you're all set for peaches this season..lol


I too, love to can. I have a great peach/vanilla/bourbon jam that I make that I've been craving for. I also recently came across a great peach 'scuffin' recipe that I'm trying tomorrow. It's a cross between a scone and a muffin.

sounds wonderful.  With peaches in season right now, I have been looking for new recipes to try.
