I use thawed frozen peas & carrots and (shhh!) boxed cheesy mashed potatoes for the topping. 

Yummy, easy comfort food.

I used to make this for my British husband and daughter when we lived in London.  I used to make them in individual pie pans and freeze them.  Then I could just pop them in the oven during the week.  I miss Shepherds pie.  Thanks for the recipe.

This is a great recipe too - you can make a 9" pie if you don't want to do the minis.  I use garlic mashed potatoes (in a box or pouch.)  I've even used frozen peas and carrots or frozen corn and lima beans.  And I don't use 2 garlic cloves - just 1 or  just garlic powder.

Ah, great minds think alike.  I had this for dinner tonight, then came and saw this post.

 

I used red wine because I do not use beef stock that isn’t home made.  I omitted the peas and substituted mushrooms.  I cook mine for about 40 minutes and let it rest before serving.

 

i had left over mashed potatoes, so I used them and topped them with schredded cheese.  The recipe is just about the same one that I use.  I always double it for leftovers.

 

It is very good.  Enjoy.

 

PS..the recipe is actually cottage pie.  Shepherds pie is always made with lamb.

We use guiness in the gravy--love it alot. Make it from scratch and tastes even better the next day.
