This is not a fancy recipe, but most folks seem to like a poke cake because it's so moist. I like to use a white box cake mix according to package directions, and then use a small package of either strawberry, orange or cherry jello mixed with 1 cup boiling water and 1/4 cup cold water and poured in the pokes/holes. My topping is 8 oz Cool Whip, 1 small package instant vanilla pudding and a small can of well drained crushed pineapple. I think the poke cakes date back to the 70s....doesn't seem like that was "just" 50 years ago!

INGREDIENTS
  • 2
    cups sifted powdered sugar
  • 1⁄4
    lb margarine (if using margarine, NOT tub or spread product) or 1/4 lb butter softened (if using margarine, NOT tub or spread product)
  • 2
    large eggs
  • 1⁄8
    teaspoon salt
  • 1⁄4
    teaspoon vanilla extract 
  • 2
    (9 inch) pie crusts, baked
  • 1
    cup heavy cream
  • 1⁄2
    cup sifted powdered sugar 
  • 1
    cup canned crushed pineapple, well drained
  • 1⁄2
    cup chopped pecans
 
 
 
DIRECTIONS
  • Cream 2 cups powdered sugar and butter with electric mixer until fluffy.
  • Add eggs, salt and vanilla.
  • Beat until light and fluffy.
  • Spread mixture evenly into baked pie crusts.
  • Chill.
  • Whip cream until stiff.
  • Blend in powdered sugar; fold in pineapple and pecans.
  • Spread mixture on top of filling and chill thoroughly.

One of my dad's (& his family's) favorite desserts (besides homemade pumpkin or blueberry pie) from many years ago was rice pudding. Whenever mum made rice

(before instant rice) he would tell her to buy plenty extra so she could make the rice pudding. I just remember it was a little time consuming back then when made from scratch. I believe it was kitchen staples of whole milk, uncooked rice, sugar, pinch of salt, vanilla extract, cinnamon and raisins, maybe an egg or two? I can't recall exactly their recipe.

Boy he sure loved it. Wish he was still around to enjoy it. 💔

@jannabelle1  Your dessert sounds delicious! I recall my aunt making something similar years ago, and I could not remember how she did it. The pudding must have been her secret.😊

I never heard of Milionaire Pie, and it sounds yummy.  I am a huge fan of coconut, so will probably use that instead of mandarin orange..

Do you think it would be too much to use the coconut without cutting out one of the fruits?

Pezziee You could leave all of the fruits and add 1/3 cup.  I think coconut is grated so small that it won't interfere with the firmness from the lemon and sweetened condensed milk.

 

This recipe is very old and probably came around when cool whip was first on the market.

Russian Tea Cookies!

She would hide them in a Christmas tin until Christmas day but my sister would always find them and signal me, and we would sneak in when my mother wasn't looking and take one

(ok or maybe 2!).

My mother could always tell by the look on our faces and the powdered sugar on our hands and facesWoman LOL

This is a family recipe that's been made at Christmas time by at least 4 generations. This year will be the first for number 5!!! 'Bubba' brought it with her when she came from Lithuania. I pass it on in the true spirit of this season!

  • Step 1

    Preheat oven to 350 degrees F (175 degrees C).

  • Step 2

    In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.

  • Step 3

    Bake for 12 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. I also like to roll mine in the sugar a second time.

I am not 100 sure this is her exact recipe. I hope it's close. Hers just melted in your mouth with some walnut crunch.

@on the bay .....YES, GOOD RECIPE!  My mother made the same cookies every Christmas!!  She would also make them a few weeks before Christmas....pack in tin....said all her Christmas cookies were better made early.  Only difference is she used chopped pecans....called them Pecan Balls...kids called them Snowballs.
