Sesame Chicken

4-6 boneless chicken breasts

1 egg

1/4 cup corn starch

3 tablespoons sugar

3 tablespoons catsup

1 tablespoon white vinegar

1 1/2 teaspoons sesame oil

dash of pepper

2 green onions...chopped

sesame seeds

cooked rice

First cut chicken into small pieces. Lightly beat egg and then add chicken. Mix well to coat. Stir in the cornstarch. Heat oil to 350* or a bit higher. Deep fry til light brown. Drain chicken on paper towels. Heat 1 tablespoon oil in a wok over medium heat. Mix sugar, catsup, vinegar, sesame oil, garlic and pepper in a bowl. (If you want more sauce double or triple the sugar, catsup, vinegar, sesame oil, garlic and pepper.) Add sauce to hot oil. Stir constantly. As soon as the mixture begins to caramelize, add chicken. Toss to coat. Sprinkle sesame seeds over the chicken. Serve with cooked rice and stir fried vegetables.

***When I make this, I triple the sauce, as I like extra sauce to go over the rice***
