We love fruit in salads-no matter the season, I sneak some kind of fresh fruit into the bowl.
This salad is something different-and very good. The dressing is really different-and I mean that in a good way/ It's a nice taste combo with the fruit, cabbage and greens.

When I get fresh picked nectarines from the orchard, this is a real taste treat. I just LOVE trying new salad ideas....

SANTA FE NECTARINE SALAD
(Source: Pillsbury Annual Recipes 2006)

DRESSING:
1/2 c. peach preserves
1/4 c. freshly squeezed lime juice
2 Tbsp. oil
1/4 tsp. ground ginger
1/4 tsp. salt

SALAD:
2 c. purchased finely shredded coleslaw blend (from a 16 oz. pkg.)
2 c. purchased torn mixed romaine and leaf lettuce (from a 10 oz. pkg. (I use fresh romaine and red leaf lettuce)
2 medium nectarines or peaches, pitted and thinly sliced (since I don't toss the salad with dressing, I squeeze a little lime juice over the nectarine slices-it helps slow down the browning)
1 c. seedless red grapes
1 or 2 jalapeno chilies, finely chopped, if desired
2 Tbsp. chopped fresh cilantro, if desired

In a small bowl, combine all dressing ingredients; mix well.

In a large bowl, combine all salad ingredients. Just before serving, add dressing; toss gently to mix. (I dont toss the salad with the dressing...I serve it on the side.)
Makes 6 (1 cup) servings.
