Thought I would post this recipe during Lent when many will be looking for salmon recipes. I got this recipe from a co-worker, who said it is very good.

Salmon Rice Hotdish

1 cup long grain regular white rice, cooked in salted water 15 minutes.
1 tbsp. fresh lemon juice
1/4 cup chopped fresh parsley
4 tbsp. butter, divided
1 # salmon fillet, cut into 2-inch pieces
1-1/2 # fresh asparagus, cut in half crosswise, blanched
1/2 cup finely chopped onions
3 tbsp. all-purpose flour
1-1/2 cups chicken stock or broth
1/2 cup heavy cream
1/4 tsp. salt
Pinch ground black pepper
1/2 cup Parmesan cheese, divided

Preheat oven to 450 degrees.
In a bowl, mix together rice, lemon juice, parsley and 1 tbsp. butter. Spoon mixture into a shallow 2-quart glass baking dish. Place salmon on top of rice. Place asparagus on top of salmon.
In a saucepan, stir and cook onions in remaining butter until tender. Gradually stir in flour until well blended. Add stock; stir until thickened. Stir in cream, salt, black pepper and 4 tbsp. cheese. Pour sauce over all. Sprinkle with remaining cheese. Bake 25 minutes or until very hot and top is brown. Garnish with sliced fresh tomatoes, if desired. Serves 4.
