I don't remember where I got this recipe. I scribbled it on piece of paper so probably off TV. Tried it last night and loved it.
2 T olive oil
1 pound butternut squash cut in 1 inch cubes
4 cloves of garlic thinly sliced
1 t crushed red pepper flakes
3 T red wine vinegar
3 T honey
Chopped parsley or sliced green onion as garnish.
In a large saute pan heat olive oil over medium high heat. Add squash cook until golden brown (4-5 minutes). Add garlic and cook another minute. Add red pepper flakes, vinegar and honey. Bring to a boil then reduce heat to a simmer until liquid is reduced to a syrupy glaze and the squash is tender (about 10-12 minutes). Remove from heat.
The only changes I made to this recipe - reduced red pepper flakes to 1/2 t and put lid on pan the last 6 minutes or so because it did not seem like the squash was getting done.

I hope you enjoy it. I am going to have it for Christmas Eve dinner. Now I have to figure a another vegetable that isn't green beans!

It sounds good. I have a leftover squash on the counter from thanksgiving.

@DiAnne if you like brussels sprouts let me know as I made a recipe today that is absolutely delicious and easy. I know they are an acquired taste but if anyone is interested I would be more than happy to post the recipe.

Thanks! This sounds really good & I think I'll make it on the 24th. That may be all I have since I haven't decided on an entree. LOL! I don't especially like cooking so only make really simple meals. I might take the easy way out & order a holiday meal from my grocery store. Then all I'll have to do is heat it . I hope you have a safe & enjoyable holiday!

I steamed the sprouts for a few minutes to soften them up a bit as I'm not big on real crunchy veggies but the recipe is a breeze to make and very good!
