SUGAR GRILLED ASPARAGUS
1 bundle asparagus (about 20 spears)
1/4 cup olive oil
1/2 cup sugar (I use Splenda)
1 tsps Kosher Salt
orange zest (for sprinkling over top)
Cut off tough ends of asparagus, roll in olive oil, coat with sugar, and sprinkle salt over all.
Grill asparagus for approximately 10-15 minutes, turning to ensure even cooking. Grill until sugar carmelizes and spears start to look a little burnt. Sprinkle orange zest over spears before serving.
Note: I've also done this in the oven on a cookie sheet pan in a 400 degree oven for about 15 minutes.
