1 pound of fresh muchrooms, cleand and stemmed (reserve stems, chop and set aside)

1 lb of bulk sausage (I use Jimmy Dean Hot, use your brand, mild or hot, Italian sausage)

1 1/2 cup of cheese shredded (sharp, mild, or blends)

3 tablespoons of freeze dried chives

Brown sausage, and add chopped stems and cook until tender, add chives, and remove from heat, add cheese until combined and slightly melted, and stuff each mushroom with a rounded tablespoon of sausage mixture (will be messy, as use your hands to pack mushroom caps with your hands, and mound it up). Place in a single layer in a baking dish or microwave safe dish and bake in oven at 350 degrees for 25-25 minutes, or in a microwave for about 10 minutes.
