I get tired of just plain rice. This is a good variation plus getting vegetable in.

SPINACH RICE

1 T olive oil
1/2 c diced onion
1 c basmati or jasmine rice, rinsed
1 t minced lemon zest
2 c low-sodium chicken broth
4 c packed fresh spinach

Heat oil in saucepan over medium heat. Add onion, saute until softened 4-5 minutes.

Stir in rice and zest. Cook 1 minute. Add broth and bring to a boil. Reduce heat to low, cover and cook 15 minutes.

Remove from heat. Left rice sit covered for 5 minutes. Add spinach to rice tossing with tongs until spinach wilts.
