I made this last week end and it is definitely worth sharing.  

 

2 t chili powder
1/2 t ground cumin
1/2 t ground coriander
1/2 t freshly ground black pepper
1/4 t cinnamon
1-1/2 t salt
3 T vegetable oil
4 to 8 chicken thighs with bone and skin

 

Pre-heat oven to 450.

Stir together spices, salt and 1 T oil.  Rub evenly all over chicken.

Heat remaining oil in an oven proof heavy skillet over mod hi heat.  Brown chicken turning once (6 to 8 minutes).  

Turn chicken skin side up.  Transfer skillet to oven and roast until cooked through (about 25-30 minutes).  Transfer to platter.  

 

Recipe called for legs and thighs - I used just thighs.  Served with curried couscous and a salad.

Good Evening - Thanks for the recipe.  I will have to give it a try.  I love to cook and bake, and have quite a collection of cookbooks, so I am always looking for new recipes to try.  Have a good evening

Sounds good - my kind of recipe.  And we do eat thighs so I'd make this one for sure and to serve with curried rice or basmati, very tasty.
