This is an oldie but a goodie.  I am currently taking a food delivery to a friend of mine who is having chemo.  Tomorrow I am taking quiche Lorraine and Spaghetti Salad.

 

1-16oz thin spaghetti broken in half
1 cup cherry tomatoes cut in half
1 cup salami cut in bite size pieces

1 med green bell pepper, diced
1/2 small red onion, diced
1 cucumber, diced
1/2 cup black olives, thinly sliced
1 bottle Italian salad dressing or make your own
1 cup grated Parmesan cheese
2 T Salad Elegant seasoning
salt and pepper to taste

 

Cook spaghetti according to directions.  Place in a large bowl with all the rest of the ingredients and mix gently.

 

I used a yellow bell pepper because I can't stand green bell peppers.  Salad Elegant is a copy cat of Salad Supreme that I can't find anymore where I shop.  You can get it from Penzeys Spices.

That sounds delicious but will your friend feel like eating that after having chemo?

@DiAnne Oh!  That looks yummy!

 

My fav Italian salad dressings are the Good Seasons Italian in the packet and Paul Newman's Family Italian.  That would also be great with some freshly grated Parmesan cheese!

@DiAnne I am going to make that for sure!  How kind of you to take that to a friend.

 

I love green bell peppers for one thing!  To me they are a must for bell peppers stuffed with a meat/rice/tomato stuffing.  That is one of my favorite foods on this earth!

I would guess it's a meal for her family, so no one has to deal with cooking right away.  I've participated in a group like that in the past.

She doesn;t feel like eating  much.  I have been doing this for several weeks.  I am only taking her 1/2 a quiche and 1/2 pasta salad tomorrow.

Oh, that sounds good for my taste buds, but DH only likes his spaghetti hot.

That is so nice of you.  

I can't imagine the worry of being ill and going through chemo along with the worries of Covid.  God bless you and your friendship.
