This recipe comes from a Jack Daniels cookbook from about 30 years ago. For anyone who likes sweet corn, this could be your ticket. And it is sooooo easy!! I've never had anything but rave reviews from everyone!

Even though there is alcohol in the recipe (very little), it cooks off while sauteing, and no one even knows that it's there.

SOUTHERN FRIED CORN

10 oz box of frozen corn (or from a can if you like)

1/4 cup of butter, or margarine (1/2 stick)

2 Tablespoons whiskey (recipe calls for Jack Daniels, but I've used whatever is on hand, Canadian Club, Jim Beam, Southern Comfort, etc.)

1 Tablespoon packed brown sugar ( I add a little more because I like mine a little more "candied", plus I use brown sugar substitute like Splenda)

Melt all the butter in a medium size skillet over medium heat, add corn and saute for about 5 minutes, or until it starts to crisp up, add brown sugar and whiskey, allow all to melt and stir to coat all the corn kernels. Turn down heat and continue to simmer, stirring occasionally. Cook until the consistency you like. The more you simmer it, the more "candied" the kernels become.
