SLOW COOKER * WINTER* *PASTA FAZOOL (won't let me spell it the correct way here)

Dust off those crock pots/slow cookers and put a pot of Pasta Fazool on for dinner.  Serve with a leafy green salad and some garlic bread.  Can't get easier than this recipe and it's delicious!

 

1 tablespoon olive oil

1 pound Italian sausagecasing removed

1 medium sweet oniondiced

4 cups chicken stock

1 (16-ounce) can tomato sauce

1 (15-ounce) can diced tomatoes

1 (15-ounce) can red kidney beans, drained and rinsed

1 (15-ounce) can cannellini beansdrained and rinsed

2 carrotspeeled and diced

2 celery ribsdiced

3 cloves garlicminced

1 ½ teaspoons dried basil

1 teaspoon dried oregano

Âľ teaspoon dried thyme

Kosher salt and freshly ground black pepperto taste

Âľ cup ditalini pasta **See note below

½ cup shaved Parmesan

2 tablespoons chopped fresh parsley leaves

Instructions

 
Heat olive oil in a skillet over medium high heat. Add sausage and onion, and cook, stirring frequently, until sausage is browned, about 5-7 minutes, making sure to crumble the sausage as it cooks; drain excess fat.
 
Place sausage mixture into a 6 quart slow cooker. Stir in chicken stock, tomato sauce, diced tomatoes, beans, carrots, celery, garlic, basil, oregano and thyme; season with salt and pepper, to taste.
 
Cover and cook on low heat for 7-8 hours or high heat for 5-6 hours. Uncover and (at this point you could stir in the pasta; cover and cook on high heat for an additional 30 minutes, or until tender. OR see the pasta *note below. Serve immediately with Parmesan cheese, garnish with a little chopped parsley

 NOTE:  I personally prefer to cook the pasta separately. After the pasta is cooked and drained, dress it with a little olive oil and when the soup is done, you can add as little or as much pasta as you want to each bowl.  Keep the leftover pasta and the soup in separate containers in the fridge.

Love this simple hearty recipe.  Love a good pasta meal during the winter months.  Thanks for posting!

@ciao_bella  Another winner posted!  I will be making this next week.  Wonder how many this recipe feeds as I usually cook soup to serve 8 to 10 for at least 2 days.  I think I may have to double it...thanks!

 

edited to agree - I usually cook the pasta separate because it absorbs too much of the liquid. My mom never put her noodles in her chicken soup.

When my Mom made it there was no meat in it. She cooked the pasta separately.

@Group 5 minus 1  Yes, many people make it without meat.  My mother (and sometimes I do too) made it both ways depending on what she had in the fridge/freezer.  It's also a great recipe for adding in any of those one or two veggies hanging out in the fridge that you need to use up.

This is one of my most fave soups----and totally agree about cooking/adding the pasta separately too--hate soggy pasta. Had one of the best bowls of this soup, one Sunday morning--at a local grocery store---in their hot food, ready to go section, years ago--OMG was it amazing!!! DD and I were out shopping there and needed to eat--had this soup and french bread for our late breakfast---we both still talk about it. Have not seen it since at the grocery store----I should have asked for the recipe!!! but will print this one out and try it!!!

Thanks for the recipe!  I'm surprised you couldn't write "******ioli".  I searched that word in the search and there were many results spelled correctly.
