I was looking through tried and true recipes to take to a pot luck next week and came upon this one. I have been making this for years and although it is says sushi in the actual title there is no raw fish in salad!
SUSHI SHRIMP SALAD
4 cups cooked white rice at room temp
2 cups diced seeded cucumber
1 cup thawed frozen peas
1/2 cup thinly sliced radishes
1/4 cup sliced green onions
1 pound cooked large shrimp (31 to 35 per lb)
1-1/2 quarts rinsed, crisped fresh spinach leaves
In a large bowl combine cooked rice, peas sliced radishes, onions and dressing (recipe to follow). Gently mix in shrimp.
Arrange spinach leaves on a platter and spoon sushi salad into the center. Garnish with whole radishes. Season to taste with salt.
Dressing: Combine 1/2 cup seasoned rice vinegar, 2 T minced fresh ginger, 2 T prepared horseradish and 2 T Asian toasted sesame oil.
This says serves 4 but I think it serves more than that. Very refreshing in the hot weather that a lot of you are having now.
