This recipe is from a well known restaurant in Seattle. Delicious!

1 pound flank steak, sliced against grain into 1/4 inch x 2 inch pieces

Marinade:
2 stalks lemon grass, pounded
2 T ginger, minced
1 T garlic, minced
1-1/2 t salt
1/4 t five-spice powder
2 T chili flakes
2 T sesame oil
1-1/2 t fish sauce
2 T vegetable oil
1 T honey

Mix together all of marinade ingredients. Marinade sliced beef at least 2 hours or up to 8 hours in fridge.

2 T vegetable oil
4 T hoisin sauce
3 T roasted peanuts, chopped fine
1/2 cup small Thai basil leaves

Discard marinade.

Heat 2 T oil in wok on high heat. Wok fry beef until 50% cooked. Add hoisin sauce. Fry until meat 80% cooked. Add peanuts and Thai basil. Cook another 30 seconds.

Only use lower 5-6 inches of lemon grass. A good fish sauce brand is Three Crabs if you can find it. I found it in my local grocery store.
