Slow-Cooked Beef Tips**
2 lbs. beef tips
1 envelope DRY ONION SOUP MIX
1 can Cream of Mushroom Soup or
Golden Mushroom Soup
Cooked Rice or Noodles
Spray inside of 4-5 quart crockpot with cooking spray. Place beef tips inside. Add DRY ONION SOUP MIX and mix together with beef. Add soup and stir all together. Do not add water. Cook on low 8 hours. Serve over cooked rice or noodles. Serves 4-6.
** Can substitute 2 lbs. of beef stew cut in small pieces or
other beef cubed...round steak or sirloin. Double DRY
ONION SOUP MIX and Cream of Mushroom/Golden
Soup for more gravy.

HONEY Walleye*
1 large egg
2 teaspoons HONEY
2 cups crushed Ritz crackers**
1/2 teaspoon salt
1 1/2 lbs. walleye fillets
1/3 to 1/2 cup canola oil
In shallow bowl, beat egg; add HONEY. In another dish combine crackers and salt. Dip fish in egg mixture, then in cracker mixture; turn until coated.
In cast-iron or other heavy skillet, cook fillets in oil over medium heat until golden and fish flakes easily with fork, 3-5 minutes on each side. If desired, top with parsley and serve with lemon wedges.
* Recipe found in Taste of Home/Farmhouse favorites.
** I substituted Panko bread crumbs.

3 Ingredient Ice Cream
Recipe from Eagle Brand
Ingredients
2 cups cream
14 oz can Sweetened Condensed Milk
2 tablespoons vanilla extract
Instructions
Combine sweetened condensed milk and vanilla in large bowl.
In a separate bowl, pour 2 cups heavy cream into bowl and whip until soft-medium peaks form.
Slowly fold whipped cream into sweetened condensed milk mixture in 3 additions. Fold until well combined.
Pour into container and freeze for at least 6 hours or until firm.
Add-ins may be added before freezing. Try fresh fruit, crushed cookies or candies, and different flavored extracts and spices.

SPICY SAUSAGE PASTA

This is definitely not a warm weather meal but it is a cozy meal on a rainy night.
1 T olive oil
1 pound kielbasa or smoked polish sausage, sliced
1-1/2 cups diced onions
2 cloves garlic, minced
2 cups chicken stock
1 10 oz. can RoTel diced tomatoes with green chilies
1/2 cup heavy cream
8 oz. uncooked penne pasta
1/2 t salt
1/2 t pepper
1 cup shredded Monterey Jack cheese
1/3 cups thinly sliced green onions
In an oven safe skillet heat olive oil until very hot. Add the sausage and onions. Cook until lightly browned. Add the garlic and cook 30 seconds. Add the chicken stock, RoTel tomatoes, cream, pasta, salt and pepper. Stir and bring to a boil. Cover and reduce heat to low. Simmer until the pasta is tender (about 15 minutes). Remove from the heat and stir in 1/2 of the cheese. Top with remaining cheese and green onions. Place under the broiler for a few minutes until the cheese is melted, browned and bubbly.
