Vegetable Cheese Frittata

 

1 TBSP olive oil

2 cups chopped broccoli

½ cup chopped green bell pepper (I used a mixture of peppers)

8 eggs

2 TBSP. milk

½ tsp. salt

4 ounces reduced fat cream cheese

  

Heat olive oil and cook broccoli and peppers for 4-5 minutes

In a medium bowl, whisk eggs, milk, and salt.

Coat a pie or quiche dish with cooking spray. Spread cooked vegetables on bottom of dish.

Cut cream cheese into 16 squares.

Pour egg mixture on top. Bake at 350 degrees for 30 minutes until done.

 

NEXT INGREDIENT: Canned tomatoes

Homemade Salsa with Canned Tomatoes

 

It's not clear what kind of tomatoes to use in this recipe, but I use canned diced tomatoes.

 

Ingredients
    • 1 1/2 cans canned tomatoes with juice
    • 3 fresh jalapeno peppers, chopped
    • 1 small onion, chopped
    • 1 lime, juice of
    • 2 cloves garlic, peeled
    • 1/4 cup snipped fresh parsley
    • 1 teaspoon salt ( or to taste)
    • 1/2 teaspoon pepper
    • 3 dashes Tabasco sauce
Directions
  1. Process in food processor or blender for just a few seconds for chunky salsa or a bit longer for a smoother texture.

Cheese Twists

Ingredients
1 can Pillsbury™ refrigerated classic pizza crust
2 tablespoon unsalted butter, softened
2 tablespoons shredded Cheddar cheese
2 tablespoons shredded Asiago or Parmesan cheese

Directions
Heat oven to 400°F.  Line cookie sheet with parchment paper.

  1. Roll out dough into 10x6-inch rectangle. Brush butter evenly over dough. Sprinkle cheese evenly over butter.
  2. Using pizza cutter or sharp knife, cut dough crosswise into 1/2-inch- wide strips. Twist each strip tightly, being careful to keep most of cheese inside; place on baking sheet. If desired, top twisted strips with additional cheese.
  3. Bake 7 to 10 minutes or until golden brown and cheese is melted.
  4. Serve warm with warm pizza sauce for dipping.

 

Domino's Cinna Sticks

Ingredients

    • 1 package prepared pizza crust ( or your favorite recipe)
    • 1/4 cup melted margarine
    • 1/2 cup sugar
    • 2 teaspoons cinnamon

Icing

    • 1 lb powdered sugar
    • 1 tablespoon milk
    • 1 tablespoon melted butter
    • 1/4 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees.
  2. Roll out pizza dough into a large rectangle.
  3. Brush melted margarine over dough.
  4. In a small bowl combine sugar, and cinnamon, mix well.
  5. Sprinkle the cinnamon and sugar mixture liberally over the pizza dough.
  6. Slice the dough into either long sticks, or cut dough in half, and then slice into smaller sticks.
  7. (The smaller sticks are easier to handle.) Place on an lightly greased cookie sheet and bake for approximately 15 minutes or until done.
  8. While the pizza sticks are cooking mix together the powdered sugar, milk, melted butter, and vanilla.
  9. Mix until smooth.

10.You may need to add an extra teaspoon of milk.

11.Serve icing with sticks.

 

These recipes could be interchangable.  Also saw one using cream cheese & jam!

Okay, this is very simple, but sometimes those are the best recipes.

These are my favorite muffins.

 

Babyfood Banana Muffins

 

1 1/2 c flour

1/2 c sugar

2 t baking powder

1/2 t salt

1 (6 oz) jar babyfood bananas

1 egg

1/2 c milk

1/4 c oil

Cinnamon sugar for sprinkling the tops.

 

This recipe makes 6 LARGE muffins.

 

Mix all dry ingredients separately from the wet ingredients and then blend them together with a fork.

Do not overmix - it should be lumpy.

Fill muffin cups and bake at 400 degrees for about 25 minutes, until the tops are golden brown.  Reduce baking time a little for small muffins.

 

To eat:

Cut in half.

Slather with strawberry jam.

Eat BOTH halves.

Coney Dog Chili

 

Ingredients:

1 pound ground beef

1/4 cup chopped onion

3/4 cup ketchup

2 tablespoons white sugar

2 tablespoons white vinegar

2 tablespoons prepared yellow mustard

1/4 teaspoon celery seed

1/4 teaspoon Worcestershire sauce

1/4 teaspoon ground black pepper

1/4 teaspoon salt

Directions:

 

1.

Place the ground beef and onion in a large skillet over medium-high heat. Cook, stirring to crumble, until beef is browned. Drain. Transfer the beef and onion to a slow cooker and stir in the ketchup, sugar, vinegar and mustard. Season with celery seed, Worcestershire sauce, pepper and salt. Cover and simmer on Low setting for a few hours before serving.

 

 

Next ingredient:  Bun (for hot dogs, hoagies, burgers,etc.)
