When I was a kid, my grandmother made the best teacakes ever! My mother never had the recipe and we searched high and low through all of my grandmother's recipe boxes after her death looking for that recipe. I have decided she must have made them from memory. Why I never thought to ask her before she passed away, who knows! Anyway, they were like a big brown soft cookie. I know she used either molasses or ribbon cane syrup ( a Southern thing, which they always had on hand because my grandfather loved that stuff on biscuits for breakfast). I'm wondering if anyone has a recipe that sounds close to what I am trying to describe.

Molasses Cookies
1 C melted butter
1 C sugar
1 C molasses
2 eggs, 1 is used for egg wash
1 C buttermilk
2 t baking powder
2 t baking soda
1 t ginger
1/4 t salt
4 C flour
Mix together butter, sugar, molasses, buttermilk and 1 egg. In another bowl sift baking powder, baking soda, ginger, salt and flour. Add flour mixture to butter mixture. Mix well and chill. Drop by tablespoons on greased cookie sheet. Mix the remaining egg with water and brush over cookies. Bake 8-10 minutes at 375 degrees.
I hope you enjoy. Grandma used to roll her dough 1/2 inch thick and cut them out but in her later years she dropped them. Her Sunday School class requested them often. Blessings

Hi, 2 thoughts on the Molasses/Ginger front. 1) Hermits, soft cakey cookie formed in large rounds or bars. (The debate on shape can be Passionate in some parts!) It's a spice cookie which sounds like it would fit the bill. 2) this one is a real Cake but if you want a cake with a goodly kick of ginger and molasses look up " Irish Black Ginger Cake" the black is because it is dark with molasses and coffee. SO GOOD! Serve it in thin slices with a side of whipped cream as It's Rich and sweet enough without frosting.
