No other carrot cake comes close to this one. It's extremely moist with just enough spice.

SCRUMPTIOUS CARROT CAKE

1-1/2 cups vegetable oil; 2 tsps soda; 4 eggs; 1 tsp salt; 2 cups sugar; 6 tsps cinnamon; 2 cups + 3 Tbsps flour; 2 tsps nutmeg; and 4 cups grated carrots.

Mix oil, eggs & sugar. Set aside.

Sift dry ingredients; blend into egg mixture. Add carrots. Mix well.

Pour into greased 9 x 13 pan. Bake at 350 degrees for 25 to 30 minutes.

CARROT CAKE ICING

Cream cheese (8-oz); 1 tsp vanilla; 1/2 cup margarine; and 1 lb powdered sugar
