This is a new-to-me recipe that I was just filing, so have not yet tried it, but it sounds so good:

Russian Garlic Side Dish

This can be served as a side salad in a small bowl or mixed with greens, as a condiment for a meat course or as an appetizer on crackers with liver pate or other meat.

30 cloves garlic, cleaned and roughly chopped

1/2 c olive oil

1/4 c fresh lemon juice

4 T white wine vinegar

salt and pepper

1/2 T oregano, opt

Blanch the garlic in boiling water for 6 minutes. Remove and plunge into cold water. Drain well and add remaining ingredients to the garlic, mix well. Marinate in the fridge for 5-7 days before serving.Yield: 1 cup
